Question about metal roofing?

I am contemplating a new metal roof for my mobile home. It will be installed over an existing metal roof on which I have installed 1×2 furring strips screwed to the trusses 24″ inches OC for attachment and ventilation. I have included 3/4″ styrofoam for insulation and sound deadening. I have almost no roof jacks on the front side of the roof, but on the back side the jacks are clustered together in a small space. In a perfect world, I want all the jacks to wind up in a the valley or flat of the metal rather than on one of the ribs. Is there a method of trimming the metal to accomplish this?, or am I forced to use a lead jack if I wind up with a pipe through the rib? Sealing the side of the jack towards the peak is another question I have, Do I cut the metal and slide the edge of the jack under the metal and then seal with mastic or collect the water on the top edge and check it every year? Any experienced installers out there want to take a crack at this question? Thanks in advance

To roofing contractors: how much difference is there between a 15lb felt, 30lb felt, and/or water+ice shield?
